An expressive, intriguing [just about] rosé made from Souvignier Gris. This variety has become a rising star in the world of climate-resistant varieties. Minimalist intervention is used across the vineyard with the grapes being picked and pressed for only a few hours of contact. This retains the fruit and a subtle colour, before fermentation and maturation in stainless steel tanks for no more than 4 months.
Pale pink in colour with a subtle bouquet of lemon, grapefruit, and white florals. The palate is fresh and cleansing with grapefruit, peach and apple finishing with a zesty citrus. Light to medium in body with a soft acidity. Enjoyable paired with Mediterranean cuisine or seafood.
