Proper cream Sherry, Gonzalez Byass 1847 is a blend of Oloroso and Pedro Ximénez aged in separate soleras for 4 years another 4 years blending after being blended. The resulting fortified wine shows raisin, dates, marmalade and caramel flavours on a palate showing sweetness and intensity. Nice and an after dinner digestive with cheese, Christmas cake and druit fruited deserts.
