This Chardonnay matures in brand new stainless steel vats at perfectly controlled temperatures. The harvests are completely de-stemmed and a traditional method of vinification is employed. The maceration is long, (three to four weeks) resulting in the softening of the tannins. 80% of the Chardonnay come from Pays d'Oc for the the roundness and the exotic fruits; and 20% from the Loire valley for the minerality and floral notes of the Chardonnay. The wine is vinified in stainless steel tank and no oak is involved in order to keep the freshness of the ripe chardonnay grapes.
